Despite common misconceptions, the word sushi does not mean "raw fish"—it actually translates directly to "sour rice".  

The concept traces back centuries to Southeast Asia and early Japan, where it began as narezushi—a brilliant method of packing cleaned fish inside heavily fermented, sour rice simply to preserve it. The original twist? People threw the sour rice away and only ate the fish! 


 

The true ancestor of modern dining arrived in 1824 during the Edo period, when a visionary chef named Hanaya Yohei invented nigiri-zushi in Tokyo. By seasoning rice with freshly brewed vinegar instead of waiting months for it to ferment, he created the ultimate, instant street-stall fast food for busy urban workers.
